La guía identifica dónde se produce el desperdicio de alimentos, las posibles causas y plantea soluciones para reducir el desperdicio ahorrando y rentabilizando a su vez los excedentes, a través de medidas como: planificar la compra, planificar la oferta, prestar atención a la manipulación, mejorar la conservación de los alimentos, ofrecer un servicio más personalizado a la clientela, aprovechar los excedentes, reducir y separar los residuos.La acción brinda también la oportunidad de llegar hasta la clientela, mediante el aprovechamiento de las sobras a través del táper, entre otras medidas.El Ayuntamiento de Vitoria-Gasteiz aspira a reducir a la mitad esta pérdida de alimentos para el año 2030. Cinco de cada seis locales hosteleros tienen implantadas pautas y medidas para reducir el desperdicio alimentario.
