Måltidsservice provide food for elementary schools, high schools, nursery homes and some kindergartens. In these kitchens, food waste (plate and serving) is measured daily. Since the monitoring started, the trend has been for food waste to decrease. In 2019, the percentage of total food waste to served food was 15. The ambition is to increase monitoring to also include kitchens outside of Måltidsservice. To reduce food waste, the kitchens are encouraged to develop their own solutions. To reduce plate waste, an important aspect is to have a good food schedule that allows enough time for guests to finish their food and have a second serving rather than helping themselves to a too big portion. Some schools have adopted a re-serving system where students can have another portion without having to stand in line again. It is also important to ensure that the food is satisfactory, this is achieved by active dialogue with the canteen guests. All kitchens have worked with informing the guests about the environmental impact of wasting food. Serving waste has been tackled by a dialogue with the personnel to reduce the number of prepared portions. Lund is also cooperating with other municipalities and the waste company SYSAV to better understand the causes behind food waste.01/20/2022 02:27:05
